Put peanut butter and vanilla in a medium sized bowl. Butter a platter or large baking dish. In a saucepan mix sugar, cocoa (or cocoa powder) and milk over medium heat until well mixed. Bring to a rapid boil and let it boil for exactly 1 minute. Quickly pour over peanut butter and vanilla and beat until thick, it should take a minute or less. Pour on a buttered platter or in a buttered large baking dish. Spread until even and let cool. After it cools cut into squares and enjoy.
Peanut Brittle
What you need:
3/4 cup water
1 1/2 cup sugar
1 1/4 cup peanuts
Instructions:
Line cookie sheet with parchment paper or coat it with cooking spray. In a saucepan combine water and sugar. Stir briefly and then boil until it's a light amber in color. If you put a little into water and it immediately hardens it's ready. (I've been making it a long time and go by color alone and haven't messed it up yet so either I'm lucky or it's just ready when it's an amber color.) Remove from heat and quickly stir in peanuts. Pour on baking sheet and spread until it's one even layer. Cool about 20 minutes, break with your hands.
